“Coume de l’Olla” Blanc is one of the signature bottlings from Tom Lubbe’s Domaine Matassa, a trailblazing natural winery in Calce, Roussillon. This wine comes from dry-farmed, organically grown vines on schist and marl soils, fermented naturally with zero additions.
The 2024 vintage is a blend of mostly Muscat d’Alexandrie with Macabeu and occasionally a bit of Grenache Blanc, all co-fermented. It’s made without sulfur, unfined, unfiltered, and often bottled with some cloudiness, reflecting Lubbe’s commitment to low-intervention winemaking.
Expect a light-bodied, highly aromatic wine, with notes of orange blossom, citrus peel, fresh herbs, and a slightly saline, stony finish. It’s dry but expressive, with a faint spritz and gentle grip that make it ultra-refreshing—especially served chilled.
