Incorporates organic, biodynamic methods: mobile chicken coop to clean vineyard and fertilize the soils, encourage biodiversity; development of vitiforestry; careful hand pruning according to the moon; no chemical fertilizers or insecticides, only natural organic products; indigenous grass and plants; grinds up vine cuttings in the parcels; extensive debudding, green harvest; attentive trellissing; essential oils to diminish the doses of copper/sulfur; braiding of the vines for energy exchange.
VINIFICATION
The grapes are lightly pressed and fermented using natural yeast. Vinification occurs in jarres and oak barrels. No chaptalisation, malolactic fermentation can occur but is not forced. The juice is bottled on fruit days in locally produced bottles.
AGING
Aged in jarres and oak barrels; sur lattes 24+ months; all riddling is done by hand and Alexandre will do "poignettage" - pick up and shake bottles to remix yeast during aging sur lattes. Disgorged by hand according to the lunar calendar without any added SO2 or dosage.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs.
