Use of indigenous yeasts for fermentation, in order to accentuate and individualize the terroir characteristics.AGINGThe varieties age separately for 36 months in French Nancy oak vats ranging in size from 10,000-35,000 liters. The blend is then made, where it continues its progress in stainless steel tanks, until the moment of being bottled. This wine evolves for 15 years (the last 6 in the bottle), until it is released on the market. So 3 years wood, 6 years tank, 6 years in bottle.
