The Merlot also comes from Cruz de Piedra but was planted in 1967. The Malbec is from Agrelo and was planted in 1927.SOILAlluvial sands with a calcareous composition.VITICULTUREAll work is done by hand. The vines are trained to low traditional trellises. The planting density is high and so yields are low.VINIFICATIONThe wine ferments for 14 days, at approximately 82 °F and the maceration lasts for 10 more days. Use of indigenous yeasts for fermentation, in order to accentuate and individualize the terroir characteristics.AGINGThe varieties age separately for 36 months in French Nancy oak vats ranging in size from 10,000-35,000 liters. The blend is then made, where it continues its progress in stainless steel tanks, until the moment of being bottled. This wine evolves for 15 years (the last 6 in the bottle), until it is released on the market. So 3 years wood, 6 years tank, 6 years in bottle.
