Avinyo

Avinyó shows what Cava can be when one family grows every grape and handles every step. It is one of only about 14 producers to hold Elaborador Integral status, the DO Cava's designation, awarded in 2022, for wineries that farm and vinify only their own fruit, roughly Spain's answer to a grower-producer in Champagne.

The Esteve family traces its roots to 1597 at Can Fontanals, the farmhouse in Avinyonet del Penedès where they still work. After phylloxera destroyed the vineyards, Joan Esteve Marcè replanted on resistant rootstock; his son Joan Esteve Nadal, who brought the first tractor to the Penedès in 1957, expanded the holdings and replanted with the local Xarel-lo, Macabeo and Parellada. Four siblings now run the estate, about 40 hectares in four parcels, farmed organically on sandy loam and calcareous clay.

The range runs from the Petillant, a lightly sparkling, Muscat-led wine made by second fermentation in tank, to Brut Nature Cavas aged at least two years on the lees with no added sugar, up to the long-aged, single-parcel Gran Reserva La Ticota. Expect bone-dry, finely textured sparkling wine that drinks like the serious white wine it is.

Five full years on the lees, zero dosage, and a single old parcel of Xarel-lo and Macabeo planted in 1940 — this is the bottle that answers anyone who still thinks Cava is a cheap Champagne substitute. La Ticota is a named site on the Esteve-Nadal family's Can Fontanals estate in Avinyonet del Penedès, where the family has farmed since 1597 and where they hold the rare Elaborador Integral status, meaning every step from vine to disgorgement happens in-house. The grapes are direct-pressed after a short skin contact, then the wine sits quietly in the cellar for around sixty months before disgorgement with no sugar added at all. What that time buys is texture and tertiary complexity — toasted nuts, pastry, a savory depth — on a frame that stays bone dry and only 12% alcohol. Treat it like a serious white wine: a proper glass, not too cold, and a plate of food in front of it.

//cdn.shopify.com/s/files/1/0125/1518/0601/files/Avinyo-Cava-Gran-Reserva-Brut-Nature-La-Ticota-2016-Sparkling-Wine-Flatiron-Wines-Spirits-New-York.jpg?v=1787755177
