Cavicchioli & Figli Vigna del Cristo

Vigna del Cristo is the Lambrusco wine people reach for when they want to prove the category is serious: a single-vineyard, 100% Sorbara bottling that is pale, perfumed, high in acid and made for the table.

The Cavicchioli family has grown grapes for more than a century in San Prospero, in the province of Modena, on the flat land between the Secchia and Panaro rivers. Umberto Cavicchioli began bottling wine under the family name in 1928, and his grandson Sandro, an enologist trained at Conegliano, now leads the winemaking. Since 2011 the winery has been part of the large Riunite & CIV group.

Vigna del Cristo was first made in 1987, from about five hectares in the Cristo locality of Sorbara, close to the Secchia. Sorbara is a fussy, low-yielding grape that is usually planted alongside Salamino to help it set fruit, and the appellation allows up to 40% Salamino in the blend. This wine uses none. The juice spends a few days on its skins, and only the first half of the free-run juice goes on to the second fermentation in pressurized tank.

The result is the opposite of the dark, grapey Lambrusco many of us grew up with: pale ruby, floral, tart and refreshing. Serve it cold, with salumi, anything fried, or oysters.

One of the reference bottlings for Lambrusco di Sorbara, and a wine that makes the case for sparkling red as a serious aperitif. The Cristo vineyard is five hectares in the Sorbara hamlet, just 200 meters from the Secchia River, where cool air off the water preserves the acidity and floral lift that set Sorbara apart from the darker, fleshier Lambruscos. Cavicchioli & Figli created the bottling in 1987 to mark the winery's 60th anniversary, and it remains 100% Lambrusco di Sorbara, even though the DOC would allow up to 40% Salamino to fill it out. Only half the free-run juice goes through the second fermentation in autoclave, which keeps the wine light on its feet: pale purplish red with a dusty pink froth, bone dry, with total acidity around 8 g/L. Serve it cold, in a white wine glass, next to a plate of oysters.
