Bruno Dangin’s Réserve de Valentin might wear a Crémant de Bourgogne label, but it drinks like Champagne with a touch more soul. Made from 100% Pinot Noir grown biodynamically in Molesme—just a few kilometers south of the Aube—it’s a Brut Nature that emphasizes terroir over technique.

Fermented in stainless steel, aged sur lattes for extended lees contact, and bottled without dosage, this NV release (disgorged 2024) is tense and mineral, with delicate red fruit, crushed chalk, and a whisper of toast from time on lees. There’s no flash here—just finesse. The bubbles are fine, the finish is dry and saline, and the overall impression is one of quiet precision.

Perfect as an aperitif or with oysters, but with enough texture to handle richer fare like roast chicken or aged cheeses. Réserve de Valentin is proof that Crémant, when made with this much care, can stand shoulder to shoulder with the best grower Champagnes.
