Have a question about this wine or any other in this year's sale?

Cidrerie de Verzy’s “Cidre Sec” 2021 is a beautifully crafted dry cider that reflects the rich terroir of the Champagne region. Produced with traditional apple varieties grown in Verzy, this cider is fermented naturally to emphasize the orchard’s unique character and the fresh, crisp qualities of each apple. With minimal intervention, “Cidre Sec” retains the pure expression of the fruit and the terroir, presenting a refreshing, refined style.

On the nose, this cider offers inviting aromas of fresh apple, white blossoms, and a hint of earthy spice, evoking a sense of place and seasonality. The palate is crisp and lively, with flavors of tart green apple, a touch of citrus, and subtle notes of stone fruit. Its dry profile is balanced by a natural acidity, creating a clean, refreshing finish with a slight hint of minerality.

Perfect as an aperitif, “Cidre Sec” pairs well with a range of dishes, from charcuterie and cheeses to savory crêpes or seafood. The 2021 vintage highlights the cider’s bright, energetic character, making it a delightful choice for those who appreciate artisanal, terroir-driven beverages with a Champagne influence.

More about this wine

Grapes | 100% apples

Vineyards | Naturally grown apples, including some biodynamically farmed orchards, from 30- to 250-year-old trees in Champagne (west of Sezanne) and Normandy.

Vinification | Fermentations in oak last for up to a year in a cold cellar in Verzy, followed by the 2nd fermentation in bottle using natural sugar from apples rather than sugar. Cider is kept on lees for at least 12 months before release.

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
