3rd Generation grower, Delphine Cazal, hails from Oger, a Grand Cru in the heart of the Cote de Blancs. Her father Claude, invented the gyro-palate, the most important invention since Madame Clicquot and her riddling table, both allow for a natural clarification of Champagne. But the real crown jewel of the estate is their 3.7 hectare, walled, monopole, Clos Cazals. One of only 21 such sites in the region, it was planted in the 1950's with 100% Chardonnay. After fermentation in neutral oak and 10+ years in the bottle, the resulting wines are nothing short of breathtaking: Notes of sweet spice, candied fruit, dense and round on the palate with citrus, brioche, umami and overt chalky minerality.
