The couple farms organically with biodynamic conversion underway, using no sulfites and fermenting in concrete, stainless steel, and concrete egg-shaped vats. Pepette is fresh, fruity wine: red berries, violet, dried grass, with a floral and subtly saline finish. At 12% alcohol and classified as Vin de France, it's unencumbered by appellation rules.
