He works from Vergisson, the village beneath the great limestone rock that looms over the Mâconnais, and many of his best parcels cling to its slopes.\u003c\/p\u003e\u003cp\u003eThe domaine has passed from father to son for eight generations. Eric's grandfather André planted some of the vines, his father Michel farmed them, and Eric took over in 1999. The parcels date from 1930 to 1979 and sit on limestone in its many forms: scree over blue marl in Les Crays, clay over fractured limestone in Sur la Roche, marl and clay over bedrock elsewhere. All the work is done by hand, the soils are tilled to keep weeds in check, and short pruning keeps spraying to a minimum.\u003c\/p\u003e\u003cp\u003eIn the cellar the grapes are gently pressed and the wines spend 12 to 18 months on their lees in oak before Eric bottles them himself by gravity, often unfiltered. The range runs from Mâcon-Vergisson, Saint-Véran and a Mâcon-Pierreclos monopole up to single-site Pouilly-Fuissés such as La Roche and Les Crays, plus L'Âme Forest, a blend of cooler sites. Forest belongs to the new wave of Mâconnais growers producing whites with Côte d'Or-level precision at very fair Mâcon prices.
