The grapes are farmed organically, mostly local Portuguese varieties such as Fernão Pires, Arinto and Touriga Nacional, grown close enough to the ocean to keep acidity high and alcohol moderate.\u003c\/p\u003e\u003cp\u003eIn the cellar the approach is natural and simple: stainless steel rather than oak, and, as they put it, nothing added and nothing taken away. The short range includes a skin-contact white called Curtimenta, a crisp Arinto, a light Touriga Nacional red and a Touriga Nacional pét-nat.
