Grapes | 100% Chardonnay

Vineyards | Best parcels of Chardonnay from four villages on the southern slopes of Epernay and the Côte des Blancs; vines planted in mid-1980s; limestone soils and a presence of fine silts and chalk on the surface; chalky sub-soils.

Vinification | Grapes are picked by hand when fully ripe, and traditionally pressed. Alcoholic fermentation in foudres and barrels with regular stirring of the lees; partial malolactic fermentation; aged 7 months followed by a light filtration before bottling in the spring; non-dosé.
