What importer Polaner Selections has to say about this wine...
VINEYARDOnly the best grapes from the Carella vineyard are used for this bottling.SOILSoil is made up of moraine (glacial deposit) which is high in minerals, rocks, gravel and sand.VITICULTUREHarvested in the second half of October. Guyot pruning.VINIFICATIONGrapes were destemmed and then pressed keeping the rolls of the destemmer sufficiently distant from each other in order to avoid ill treating the grape as much as possible. After the fermentation at 28-30°C, as from the second day of processing two pressings a day were carried out in order to favour the extraction of the anthocyans and the polymerised tannins from the skins, which give that characteristic velvety, sweet and at the same time austere taste to this wine.AGINGAged for about two years in large oak casks followed by a year in the bottle before release.
