In 1824 George Smith, who had been distilling illegally on his farm, became the first person in Scotland to take out a licence under the new Excise Act. The distillery's tall, narrow-necked stills give a light, elegant spirit.\u003c\/p\u003e\u003cp\u003eSignatory is one of Scotland's most respected independent bottlers. Andrew Symington founded it in Edinburgh in 1988. In 2002 he bought the Edradour distillery and moved the business to Pitlochry. Signatory buys individual casks and bottles them under its own label, often as single casks, at cask strength or without chill-filtration, and with natural colour.
