The skin contact gives it the tannic grip and dried-fruit spice that skin-fermented whites are prized for, without the volatility that too often comes with the style. This is not a Bordeaux-style Sémillon and does not try to be. Vejr works with ambient yeast, a brief spell on the skins, neutral barrels, and bottles unfined and unfiltered, which leaves a white with unusual texture and grip and a savory, almost herbal cast alongside the citrus. Made in tiny quantities.
