We are absolutely enamored with the wines of Boulard. Elegance and power, with brioche-y oxidative notes, tempered by wispy lemon curd and chalk. One of the best things we drank last year. With Champagne's ever rising prices, that makes this one of the best deals around.

Northwest of Reims in one of the northernmost areas of Champagne, the fruit source for Les Rachais is a half-hectare, selection-massale parcel planted in 1964 and farmed biodynamically since the '90s. Francis Boulard picks for this and all his cuvées at a high level of ripeness to minimize the need for dosage. This wine then fermented spontaneously in used Burgundy barrels and remained en tirage until 2020.

100% Chardonnay. The original Boulard family holdings are in the village of Cormicy, which is the northernmost limit of Champagne vineyards, in a zone called the Massif de St. Thierry, well northwest of the city of Reims. Here, Francis and Delphine Boulard have 1.6 hectares of vines. "Les Rachais" is the heart and soul of their tiny production, coming as it does from a 0.5-hectare parcel planted by Francis in 1964 with massale selections of Chardonnay. As the vigneron of his family's Raymond Boulard wines, Francis converted Les Rachais to biodynamic farming in the 1990's as an experiment. His commitment to this way of farming was so strong that he split with the family over it in 2009. He and Delphine claimed their rightful half hectare of Les Rachais and still work it fully biodynamically (it is certified-organic as well). The soils are deep, sandy limestone over hard limestone rock and the exposure is southern.
