Aged for years in mixed vessels it exemplifies Cretan garrigue with long, savory notes and honeyed texture. In Gianni’s estimation this is the real Sitia white, before Vilana was mandated into the PDO blend. As such it is just a PGI Crete as it does not meet the blending requirements. Golden color, honeyed and deep—stone fruit and treacle, marmite, umami, soy, mushroom and caramel. Bracing acidity, fig, salinity and parmesan rind."
