Jonathan Didier Pabiot

Jonathan Pabiot is one of the growers giving Pouilly-Fumé, long in the shadow of Sancerre across the river, a new sense of purpose: organic and biodynamic farming, wild-yeast fermentations, and Sauvignon Blanc that tastes of stone rather than cut grass.

The Pabiots have farmed at Les Loges, a riverside hamlet near Pouilly-sur-Loire, for generations. Jonathan, once a local motocross champion, started in 2005 with three hectares inherited from his grandfather and began converting to organic farming with his very first vintage. In 2010 he joined forces with his father Didier, who farmed about fifteen hectares, and the estate became Domaine Jonathan Didier Pabiot. Its roughly twenty hectares are certified organic and, since 2016, biodynamic: no herbicides or synthetic treatments, hedges and fruit trees around the plots, and everything picked by hand.

The soils are the appellation's classic mix of Kimmeridgian marl, limestone and flint. In the cellar, slow cool pressing, native yeasts and long lees aging in steel, concrete, wood or amphora, with no fining or filtration. The cuvées carry family names: Elisa, for his daughter, from young vines, and Léon, for his son, the flagship. Smaller single-soil wines such as Luminance and Eurythmie and a little Chasselas fill out the range. Expect precise, transparent, quietly intense Pouilly-Fumé.
