Etoiles refers here to the marl and limestone soils rife with the fossilized remains of ancient, tiny marine animals, including some shaped like stars. This marine sediment soil imbues the wine with terrific minerality and a compelling texture. This is Chardonnay with 33 months of lees aging — citrus, salt and oyster shell are the dominant flavors here.
