Las Pedreras

Wine cognoscenti have been excited about Spain’s Sierra de Gredos region for a while now. There, you'll find old, old vines, distinctive granite soils, and steep slopes. Pruning, treating, plowing and harvesting all entail backbreaking work; as more and more young people move to the cities, and away from agriculture, the Gredos is almost lost to time.

Of course, not entirely. Some of Spain’s most important winemakers have projects here, from the legendary-in-their-own time Comando G to roving enologist Raúl Perez. In the Gredos, Garnacha becomes something ethereal, almost otherworldly. The poor soils, the high elevation, the ancient vines — these all work together to impart real finesse and elegance to a grape that many have written off as boozy, brash and basic.

One of the most exciting Gredos projects we’ve tasted recently comes from Las Pedreras, a new protect from wunderkind winemaker Bárbara Requejo Frutos and Guzmán Sánchez de la Parra, a Gredos native and restauranteur. Bárbara, a Ribera del Duero native, is young (we’re not sure she’s 30 yet), but her resumé is impressive, with stints at Haut-Brion, Pierre Péters, and Peay under her belt. Here are glowy examples of the many faces Garnacha can show, from pale pink rosé (with or without bubbles) to garnet-red, crisp and aromatic to bold and textured.

A single paraje bottling from barely six-tenths of a hectare of old Garnacha at 1,070 meters, in a northeast-facing amphitheater ringed by chestnut and oak trees near Las Herguijuelas. That cool exposure and the surrounding forest are the whole point: they slow ripening in a hot part of Spain, which is why the wine comes out delicate and almost wispy in texture yet explosive on the palate. The granite here is poor and rocky, the vines are dry-farmed and organically worked, and everything is fermented with native yeasts — Bárbara Requejo, who trained at Haut-Brion, Pierre Peters and Peay before founding Las Pedreras with Guzmán Sánchez in 2020, keeps no fixed protocol and adjusts whole-cluster use vintage by vintage. Total production across the whole estate runs to roughly 20,000-25,000 bottles from just over three hectares, so a parcel this small yields very little. This is the most detailed and site-specific wine in the range, and it rewards a large glass.

//cdn.shopify.com/s/files/1/0125/1518/0601/files/Las-Pedreras-Cebreros-Garnacha-Vertiente-De-Las-Animas-2024-Red-Wine-Flatiron-Wines-Spirits-New-York.jpg?v=1784040714
las-pedreras-cebreros-corral-de-gargantilla-2024-750ml
Las Pedreras, Cebreros Corral De Gargantilla, 2024

One of the highest vineyards in all of Cebreros, at 1,050 meters, on an unusual soil mix of slate, clay and granite that you rarely find together in Gredos. The name tells you what is there: the dry-stone corral that once fenced the vineyard, and the gargantilla, the ravine dropping down from the Sierra de Gredos. Vines here are over sixty years old, all Garnacha, farmed organically and dry-farmed, fermented with indigenous yeasts and raised in 500-liter foudres, then bottled without fining or filtration. Las Pedreras was founded in 2020 by winemaker Bárbara Requejo — a Ribera del Duero native not yet thirty, with Haut-Brion, Pierre Peters and Peay on her resume — and Gredos-born restaurateur Guzmán Sánchez, and their wines are the ethereal, high-altitude style that has made this region one of Spain's most exciting. The fruit comes from a set of separate parcels scattered across the Alto Alberche villages on decomposed granite, between roughly 900 and 1,200 meters, each vinified according to what it needs: some fermented whole cluster, some fully destemmed. Aging happens in a mix of stainless steel and old French oak, so the wine stays pure-fruited and radiant rather than oaky.
