Laurent calls himself an \"haute couture négociant,\" and the business is a hybrid: about seven hectares of his own vines plus fruit from partner growers, spread across some two dozen cuvées from Bourgogne up to Grand Crus in both the Côte de Nuits and Côte de Beaune. Every cuvée carries the name of a tree, flower or plant: the Griotte-Chambertin is Cuvée du Saule (willow), the Clos de Vougeot Cuvée du Cèdre (cedar), the Bourgogne Blanc Cuvée du Perce-Neige (snowdrop).\u003c\/p\u003e\u003cp\u003eThe old Ponsot convictions came with him: late picking, only old barrels and no new oak, no fining or filtration, and synthetic closures he spent years developing.
