Like their father and cousin, their vineyards are centralized in Cerasuolo di Vittoria — the only appellation on the island that’s been granted the prestigious DOCG status. Nero d’Avola and Frappato are the all-star red grapes, and Grillo, Insolia, and Moscato are the championship white varieties.\u003c\/p\u003e\u003cp\u003eThe brothers didn’t just learn viticulture and winemaking from dad; they’re actually using fruit grown at COS, which is, unsurprisingly, pristine. As such, organic and biodynamic techniques are employed in the vineyards, and fermentations are spontaneous.
