To achieve this, Pascal takes a finished base wine and adds unfermented pressed grape juice from the following vintage, allowing wild yeasts to trigger the secondary fermentation naturally. This tiny cuvée is only made when two successive vintages align. The result tastes like wet chalkboard, green apple, and sea air—pure expression of the chalky Côte des Blancs terroir.
