The wine is 100% whole cluster fermented with no added SO2, minimal punch-downs, and aging in used barrels without fining or filtration. Saito's approach is to let the vineyard speak: no new oak, no manipulation. The 2022 vintage in Burgundy produced wines of wonderful typicity and freshness.
