The name may go back to the 12th century, but the current estate took shape in 1984, when the winery was built, and the style has barely changed since. There are 15 hectares of vines on granite, at up to around 500 meters, trained high on traditional pergolas that lift the ripening grapes away from the Atlantic humidity.\u003c\/p\u003e\u003cp\u003eThe farming is careful and largely organic in practice: cover crops between the rows, soils left undisturbed, and treatments only when truly needed. Each plot and variety is picked by hand and fermented separately with native yeasts in stainless steel. Malolactic fermentation is blocked to keep the acidity bright, and the only additions are a little sulfur and CO2 at bottling.
