Jacques and Marie-Hélène Bailly ran the domaine for many years, and their daughter Sonia joined at the end of 2007. Today they farm around 14 hectares in Sancerre, centered on Bué, with clay-limestone and pure limestone soils. In 1995 the family added about 5 hectares in neighboring Quincy, where Sauvignon Blanc grows on limestone, clay and gravel along the Cher River.

The Sauvignon Blanc is made to stay fresh and pure, fermented in stainless steel. The range covers a straight Sancerre, cuvées from named sites such as Chêne Marchand in Bué, the Quincy Beaucharme, and a red and a rosé (La Louée). The rosé is pressed straight away for a pale, coppery color. Expect bright, citrusy, mineral wines that are Loire to the core.

Chêne Marchand is the vineyard the merchants used to keep for themselves — the name is a corruption of "Choix Marchand," a merchant's choice — and it's still arguably the most famous site in the Sancerrois. The parcel is pure Jurassic "Caillottes," 100% limestone under a thin skin of clay, with vines over 50 years old planted at a dense 6,500–7,000 per hectare, and it gives a Sancerre of real chalky tension rather than just grassy greenness. The Baillys have farmed in Bué father to son since 1700, and the estate today is run by Jacques with his wife Marie-Hélène and daughter Sonia, who took over winemaking in 2007. Their approach is to keep everything separate: 23 parcels across 19 hectares, sorted into roughly a dozen vats by site, soil, exposure and vine age, so a site like this one can speak on its own. Vinification here is deliberately hands-off — table sorting, press juice kept apart, a 24-to-48-hour static settling, fermentation in thermo-regulated vats, then ageing on fine lees. In an appellation where quality swings wildly from grower to grower, this is one of the reliable ones, and a grand-vineyard Sancerre that overdelivers for what it is.
//cdn.shopify.com/s/files/1/0125/1518/0601/files/Sylvain-Bailly-Sancerre-Chene-Marchand-2024-White-Wine-Flatiron-Wines-Spirits-New-York.jpg?v=1789223979
sylvain-bailly-sancerre-la-louee-rose-2025
Sylvain Bailly, Sancerre La Louee Rose, 2025
Sancerre rosé is one of the Loire's great under-the-radar pleasures: 100% Pinot Noir, dry, and nothing like the Provençal template most shoppers default to. La Louée comes off a Jurassic foundation — 70% Kimmeridgian clay-limestone marls, 30% of the pebbly limestone the locals call caillottes — which is exactly the kind of soil that gives Pinot Noir here its cut. The Bailly family have been vignerons in Bué, right in the heart of Sancerre, from father to son since 1700, and Sonia Bailly runs the estate today, farming 12 hectares scattered across 23 separate parcels. Their approach is granular: the fruit is vinified parcel by parcel according to exposure, soil and vine age. This is a wine built for drinking young and gladly, and there's no reason to wait.
//cdn.shopify.com/s/files/1/0125/1518/0601/files/Sylvain-Bailly-Sancerre-La-Louee-Rose-2025-Rose-Wine-Flatiron-Wines-Spirits-New-York.jpg?v=1789569590
