Palistorti is its everyday line, the easiest way into the house style.\u003c\/p\u003e\u003cp\u003eLaura di Collobiano and Moreno Petrini have run Valgiano since 1992, working with viticulturist and winemaker Saverio Petrilli. They converted to organic farming in the 1990s and to biodynamics in 2002, and they are Demeter certified. The vineyards face south on chalky, clay-rich alberese marl and sandstone washed down from the hills behind the estate. Nearly 200 acres of woodland surround the vines, and the estate also produces olive oil and honey. Valgiano thinks of itself as a whole farm rather than just a winery.\u003c\/p\u003e\u003cp\u003eIn the cellar, things stay simple. The reds are hand-harvested and destemmed, fermented with native yeasts in small open-top wooden vats and foot-trodden, then aged in older French oak and cement. The Palistorti Rosso is led by Sangiovese, with Merlot, Syrah and a little Canaiolo and Ciliegiolo. The Bianco blends Vermentino, Trebbiano, Malvasia and Grechetto.
