From one of Sonoma’s most storied vineyards, Ultramarine’s Hirsch Rosé 2018 is a sparkling wine that pushes boundaries and expectations. Dan Petroski’s cult-label Ultramarine treats this Pinot Noir fruit with a Champagne purist’s eye—native fermentation, aging in neutral oak, full malolactic, extended lees aging, and zero dosage at disgorgement.

The 2018 vintage brings incredible clarity: wild strawberries, rose petal, blood orange, and crushed herbs ride atop a spine of racy acidity and flinty, ocean-air minerality. The mousse is fine, the finish long and savory. There’s no sugar here to round the edges—just site, structure, and quiet power.

Made in tiny quantities and almost impossible to find outside of mailing list allocations, Ultramarine Hirsch Rosé is not just a wine—it’s a benchmark for what California sparkling can be when terroir and restraint take center stage.
