Hirsch Vineyard, perched high above the Pacific in the Fort Ross-Seaview AVA, is famed for its complex, site-driven Pinot Noir and Chardonnay—and Ultramarine transforms that fruit into a rosé that’s anything but ordinary. Made via traditional Champagne methods—barrel fermentation, aging under cork, no dosage—this sparkling wine is intensely mineral, subtly savory, and built to evolve.
The 2020 Hirsch Rosé shows aromas of wild strawberry, rose petal, tangerine zest, and crushed shells, with a palate that’s dry, taut, and saline, showing the Pinot-driven depth and structure balanced by bright acidity and fine mousse. There’s a whisper of spice and coastal herbs, and the finish is long, clean, and quietly powerful.
