VINEYARDA late release chardonnay from three exceptional vineyards planted between 2012-2019: 34% X Omni Vineyard Block 5 – 15+mixed clones picked 9/8/21 33% Seven Springs Vineyard, Eola-Amity Hills – mixed Dijon clones picked 9/7/21 & 9/10/21 33% Koosah Vineyard, Eola-Amity Hills –mixed Dijon clones picked 9/15/21SOILBasalt and Jory soilsVITICULTUREFarmed using organic and sustainable methodsVINIFICATIONHand-picked between 9/7/21 and 9/15/21, each lot was crushed, pressed and browned in cold steel tanks for 6-24 hours before sulfur addition. The lots were not racked off solids, vineyard-specific pied de cuve kicked off ambient yeast fermentations in warming steel tanks. Each lot was then transferred with full solids to a mix of new, second fill and third fill Damy puncheons.AGINGAged for one year in oak, 50% new and 50% second fill Damy puncheons, and an additional 126 months in stainless steel on the lees and racked into steel tank for 6 more months before bottling.
