Domaine Gilbert Picq is everything that’s going right in Chablis these days.

It all begins and ends with how the wine tastes, of course, and Picq’s Chablis is a delicious, straight up expression of Chablisienne terroir. It has the famous minerality. And it has the bright acid drive that keeps the wine fresh on hot days.

The Picqs do this by taking the whole project seriously--like the best of today's Chablis--investing the time, energy and money to do things right. Pascal Picq (the brother in charge of the vines) keeps yields low with aggressive winter pruning and summer crop thinning. So there's less wine, but it's more concentrated with Chablis goodness. They harvest by hand (rarer than you’d think, in Chablis).

Didier Picq (the cellar brother) vinifies with natural yeasts and permits no oak in the process: nothing that might distract from the terroir or the fruit.
