The 2023 comes from organically farmed vines more than 30 years old around La Chêne Verts. It was fermented entirely as whole clusters with native yeast in cement tanks, then aged in one- to three-year-old barrels and bottled without fining or filtration. The family makes La Guiraude only in great years and in tiny quantities.
