Muscat of Spina is a nearly forgotten Cretan variety named for the mountain village it grows in, and the vines here are ungrafted, densely planted, and roughly a century old, sitting at 750 to 850 meters on black schist in the mountains behind Chania where cold nights hold the acidity. Aori, which means mountain in Cretan dialect, is the project of former sommelier Aimilios Andrei and oenologist and viticulturist Dimitris Skouras, who aim to add as little as possible without giving up precision. Fermentation and aging happen in stainless steel and ceramic Clayver eggs, with no wood at all. About 4,000 bottles were made, at 12% alcohol.
