Arnaud Lambert, one of the Loire's top growers and an organic farmer, makes Midi from his largest holding, 3.5 hectares of south-east-facing vines planted in 1985 on sandy clay over soft tuffeau limestone. Only about 10% sees oak and there's no malolactic fermentation, which keeps the acidity bright and the minerality ringing. (It used to be labeled Clos de Midi, but a road now splits the walled parcel, so it is simply Midi as of 2022.)
