It's a joint project between Raul Perez and Rodri Mendez of Forjas del Salnes, built on three tiny parcels in the coastal village of Dena in the Val do Salnes, sites so old they were never replanted after phylloxera, which makes them some of the oldest surviving ungrafted vinifera anywhere. The vineyard name translates as 'the cross of souls.' Fruit is whole-cluster pressed and fermented spontaneously in well-seasoned French oak, malolactic is blocked entirely (Perez simply picks two to three weeks later than his neighbors so the malic acid falls on its own), and the wine rests about a year and a half on fine lees before bottling.
