It runs roughly a third each Pinot Noir, Pinot Meunier and Chardonnay, and it is that accumulated reserve, not oak or dosage, that gives the dried-fruit, green-almond and honeyed depth. After blending it rests around three years on its lees before disgorgement, and like the family's other top cuvees it takes its second fermentation under cork rather than a crown cap. Reflet d'Antan means something like a reflection of times past, which is exactly what a perpetual reserve is.
