Amélie Berthaut treats it with the same hands-off approach she gives her premier crus: cold maceration, wild-yeast fermentation in concrete, gentle pump-overs, malolactic in concrete, then ageing in used barrels only. No new oak touches it, which is very much the house creed here — Berthaut distrusts new wood and ages longer than fashion dictates. She built this domaine by bringing her mother's Gerbet vines and her father's Berthaut vines under one roof, and she farms the whole thing organically, with one slope too steep for a tractor worked by horse.
