The 2007 R.D. is an exceptional wine. Half a century ago, Bollinger became the progenitor of the concept of 'recent disgorgement': holding back a number of bottles and aging them far beyond what's considered the norm. In the case of the 2007 — a blend of 70% Pinot Noir and 30% Chardonnay, with 91% of the blend coming from Grand Cru sites — the wine sat under cork for 14 long years aging sur latte. It was then manually riddled and disgorged, and just 3 grams of dosage were added.
