That down-to-earth beginning shows in the farming: the cuvée comes from 3.6 hectares of vines averaging 70 years old, on clay and limestone, farmed biodynamically and picked by hand. It's a grower's Vin Jaune with nothing smoothed away. Open it next to a wedge of aged Comté and give it time in the glass.
