Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. He treats the Cramant fruit exactly as he treats his own: cold native-yeast fermentation in used barrels, no fining, no filtration, long aging on fine lees, and a dosage decided by blind tasting rather than a house formula, which in this cuvee has meant essentially nothing at all.
