Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. Grapes are picked by hand, pressed slowly, and the juice moves by gravity; fermentation is cold and spontaneous in barrels of 228 to 350 liters, and the wine rests for years on fine lees before disgorgement, bottled unfined, unfiltered, and dosed at roughly 2 g\/L after blind tasting.
