This is Caze-Thibaut's flagship, drawn from six small parcels around Chatillon-sur-Marne on clay-limestone soils with chalk beneath, farmed certified organic since 2018. Fabien Caze is the tenth generation of his family to grow grapes on the right bank of the Marne, but the estate as it exists now dates to 2013, when he carved 2.66 hectares out of the family holdings and started bottling on his own after training with Chartogne-Taillet. Fermentation is long, cold and spontaneous in barrels, the wine spends around two years on fine lees, and it goes into bottle unfined and unfiltered as a Brut Nature.
