This was the plot that launched the couple's Aligote collection, planted to old vines that lend concentration. Tomoko Kuriyama and Guillaume Bott farm organically and vinify with a light hand: whole-bunch pressing, wild yeast, barrel and lees aging, and next to no sulfur.
