Barsac is the commune inside Sauternes whose growers may use either name, and Coutet, a Premier Cru Classe sitting behind a square thirteenth-century tower, farms 38.5 hectares of sand, red clay and limestone divided into forty-eight parcels, with vines averaging around sixty years old. The blend is roughly 75% Semillon, 23% Sauvignon Blanc and 2% Muscadelle, picked in successive passes that take only the berries noble rot has shriveled, then fermented and raised in French oak for about eighteen months in a cellar 110 metres long, the longest in the appellation. 2014 was an outstanding year for botrytis here, marked by lemony rot character and high acidity, which plays straight to Coutet's strengths.
