Doisy-Daene is a Second Growth of Barsac, the cooler limestone enclave inside Sauternes, and has been in the Dubourdieu family since 1924, a name synonymous with brilliant white winemaking in Bordeaux. This is the classic sweet bottling, a Semillon-led blend with a little Sauvignon Blanc, grown on the clay-limestone plateau of upper Barsac and fermented and aged in barrel; the 2005 was made by Denis Dubourdieu, the Bordeaux oenology professor who did more than anyone to modernize the region's whites. Two decades on it is rich and concentrated but still bright, the low pH of the vintage keeping Barsac's signature acidity front and center while the first savory, nutty notes of maturity arrive. Half-bottles move faster than 750s, which is the point here: this one is right where you want it.
