But Pichon-Baron has always made beautiful wine in tricky vintages: the estate's deep gravel terroir, its old-vine Cabernet Sauvignon backbone, and that meticulous AXA approach produce wines of structure and class even when the weather conspires against it. Eighteen years on, the 2007 is drinking beautifully — cedar, graphite, cassis softened to dried currant, sweet tobacco, savory earth, fine-grained resolved tannin. A leaner, more classical Pauillac built for the table.
