Mature sweet wine from the top tier of the 1855 classification is still one of the great values in classic wine, and it's far more fun to drink than to talk about. Rabaud-Promis sits on the gentle slopes of the Rabaud hill. The vines grow in a thick layer of Pyrenean gravel over clay-sand subsoil, around a château that has stood there since the 17th century. The house farms the way great Sauternes demands: pickers go through each plot by hand in several passes, taking only the grapes that have reached the right level of over-ripeness. Today the vineyard is about 80 percent Semillon, with Sauvignon and a little Muscadelle. One bit of trivia we love: the estate says it was the first in Sauternes to protect its vines from hail with an anti-hail cannon.
