Rabaud-Promis is a First Growth in the 1855 Sauternes classification, farming a sloping gravel-and-clay hillside in Bommes that in places is so thick with stones it looks more like Chateauneuf-du-Pape. The blend leans hard on Semillon, about 80 percent, with Sauvignon Blanc and a splash of Muscadelle, picked in successive passes through the vineyard and aged roughly a year in French oak, a portion of it new. Twenty-five years on it has moved out of primary honey and citrus into marmalade and dried apricot, and there is no urgency about drinking it. The half bottle is the right format for sweet wine: four generous glasses after dinner without opening a full bottle.
