The blend is 90% Sauvignon Blanc with 10% Semillon, and the winemaking is unusually elaborate for a second wine: roughly 60% fermented in French oak barrels, a further chunk in large foudres, the rest split between stainless steel and concrete eggs. That patchwork is what gives the wine texture without weighing it down, and 2019 was a warm, generous year that filled it out nicely. Now several years past the vintage, it has shed any early oak edge and drinks with real poise.
