Pierre Sabon, who took over winemaking and blending\u003cimg\u003e from Joseph Sabon in 1978, came up with the idea of setting aside the best of the harvest from those century-old vines, and the first Papet followed in 1989. \"Papet\" is Provençal for grandfather (a word all of France was hearing in the late '80s, thanks to Yves Montand's Papet in Jean de Florette), and the cuvée honours the family's own grandfather, Séraphin Sabon. The old vines grow on the classic Châteauneuf mix of rolled galets, red clay, sand and limestone. The family says they never set out to make the most powerful Châteauneuf. Instead they build the Papet as a vin de garde, meant to age for decades and keep its freshness.
